Lemony Greek Chickpeas – Garlicky, lemony, and full of bright, fresh, Greek flavors, these Trader Joe’s copycat chickpeas make an easy, healthy side dish in only 10 minutes!

Ingredients

  • 2 tbsp olive oil
  • 2 minced garlic cloves
  • 15 oz. can of chickpeas drained
  • 1/4 tsp. cumin
  • 1 oz. fresh lemon juice (approx. 1 lemon)
  • pinch crushed red pepper flakes
  • 2 tbsp chopped fresh parsley
  • sprinkle sumac (optional)
  • salt & pepper to taste

Instructions

  1. In a small sauce pan or skillet, sauté the garlic in olive oil for 1-2 minutes, stirring often. Then add the cumin and sauté for another minute to bring out the flavors of the cumin.
  2. Add the drained can of chickpeas to the garlic oil along with the red pepper flakes, lemon juice, salt & pepper. Sauté for a couple minutes to let the flavors come together, taste for needed salt & pepper, then toss in the fresh parsley. If you have some, sprinkle the sumac over the beans when serving. Enjoy!
