Ingredients

  • 1/4 cup extra virgin olive oil
  • 2 yellow onions , chopped
  • 1 cup celery , finely minced
  • 1 cup carrots , finely minced
  • 1 teaspoon dried thyme
  • 1 teaspoon kosher salt
  • 1/2 teaspoon coarse ground black pepper
  • 6 cloves garlic , minced
  • 1/3 cup tomato paste
  • 1 teaspoon paprika
  • 4 roma tomatoes , finely diced
  • 1 pound dry green lentils , use small lentils
  • 8 cups vegetable broth

Instructions

  1. Add the olive oil to a large pot and heat on medium heat.
  2. Add the onions, celery and carrots and cook until onions are translucent for 5-7 minutes.
  3. Season with thyme, salt and pepper, add in garlic.
  4. Stir and cook for 30 seconds until garlic is fragrant.
  5. Add in the tomato paste and paprika and stir well, cooking for 1 minute.
  6. Add in the tomatoes and stir.
  7. Add in the lentils and vegetable broth and bring to a boil.
  8. Reduce to a simmer and cook for 50-60 minutes, covered, until lentils are tender.
