Light Dinner Cauliflower Rice

This microwave cauliflower rice is light, fluffy, and full of flavor. It’s one of my favorite light dinner recipes and take a few minutes to make.

Ingredients

  • 1 head cauliflower
  • 3 eggs beaten
  • 2 cups mixed carrots and peas fresh or frozen
  • salt and pepper to taste
  • 1/2 teaspoon optional sesame oil

Instructions

  1. Wash the cauliflower and pat dry with paper towels.
  2. Grate the cauliflower using a box grater or food processor.
  3. Transfer the rice to a piece of paper towel and squeeze to remove any excess moisture.
  4. Add cauliflower rice, carrots, and peas to a large microwave-safe bowl. Cover with a lid or plastic wrap. Cook on high for 2 minutes.
  5. Beat the eggs in another bowl, and add it on top of the cauliflower rice. Don’t mix at this point.
  6. Cover with the lid or plastic wrap, and microwave on high for 45 seconds (the eggs will be half-cooked).
  7. Mix the egg with the cauliflower rice and other vegetables. Microwave for another 45-60 seconds until eggs are fully cooked. Season with salt, pepper, and mix well.
  8. Sprinkle with chopped green onions. Serve and enjoy!
