Ingredients
- 24 wonton wrappers
- 2 Tbsp olive oil
- 24 medium shrimp peeled and deveined
- 1/2 tsp salt
- 1 teaspoon chili powder
- 2 limes juiced
- Non-stick cooking spray
- 1/2 c. guacamole
- 1/2 c. Pico de Gallo
- 2 Tbsp chives chopped
Instructions
- Preheat oven to 350 degrees.
- Spray wonton wrappers with non-stick cooking spray. Arrange in 24 mini muffin cups. Bake in preheated oven for 5-7 minutes or until edges are just starting to brown. Remove from oven.
- While wontons are baking toss the shrimp with 1 Tbsp olive oil, salt, lime juice and chili powder. Cook in skillet over medium heat, about 5-7 minutes or until they are opaque throughout.
- Fill each wonton cup with gaucamole, then pico de gallo and then top with one shrimp. Sprinkle chives on top of shrimp.
