Lightened-Up Guacamole
Hidden veggies slash the calories (but keep the flavor!) in this creamy lightened-up guacamole.
Ingredients
- ⅔ cup peas thawed, frozen
- ¼ cup cilantro leaves and stems
- ¼ cup jalapeño peppers diced, pickled
- 1 garlic peeled and smashed, clove
- 3 avocado ripe
- lime juice of 1
- 1 teaspoon herb salt or regular salt, like Herbamare
- cilantro extra for garnish; pickled jalapeños
- jalapeño extra for garnish; pickled jalapeños
Instructions
- Place the peas, cilantro, pickled jalapeños, and smashed garlic clove into the bowl of a food processor. Pulse a few times, then run steadily until the mixture forms a smooth paste. You may need to stop and scrape the sides a few times.
- Add the lime juice, avocados, and salt. Pulse, stopping to scrape the sides as needed, until the avocados are broken down and the guacamole has reached the desired texture.
- Taste, and adjust seasonings if necessary.
- Scrape the guacamole into a bowl, garnish with cilantro and extra pickled jalapeños.
- Serve immediately.
