Lime Curd
This tart and versatile Lime Curd looks impressive but only takes 20 minutes!
Ingredients
- 3/4 cup granulated sugar
- 3 egg large
- 1 egg yolk
- 1/2 cup lime juice fresh
- 4 tablespoons butter cut into pieces, unsalted
- 2 tablespoons lime zest
Instructions
- In a stainless steel bowl, whisk the granulated sugar, eggs, yolk, and lime juice together.
- Set over a pot of simmering water and continuously whisk to prevent the egg from curdling, cooking until the mixture thickens, roughly 10-15 minutes.
- Take the pot off heat and strain the curd using a fine mesh sieve set over a medium bowl, pressing it with a spoon as needed.
- Gradually incorporate the butter chunks and zest into the heated lime mixture, mixing until the butter fully melts and the mixture achieves a smooth consistency.
- Transfer the lime curd to a clean jar. Let it cool to room temperature, then cover and refrigerate. The lime curd will thicken further as it cools.
