Ingredients
For the noodles
- 10 oz. lo mein noodles fresh
- 3 tablespoons soybean oil
For the lo mein sauce
- 2 tablespoons black soy sauce
- 2 tablespoons soy sauce light
- 2 tablespoons Shaoxing wine
- 2 tablespoons sesame oil
- 1 tablespoon Sriracha sauce , or more to taste
- 3 teaspoons sugar or brown sugar
- 1 tablespoon white vinegar
- 2 tablespoons chicken broth (or vegetable broth or water)
For the stir-fry
- ½ lb chicken cutlets cut into thin strips, or chicken thighs
- 2 tablespoons cornstarch
- 5 tablespoons soybean oil
- 2 teaspoons sesame oil
- 3 cloves garlic , chopped
- 1 tablespoon ginger fresh grated
- 1 red onion , cut into strips
- 3 oz. chinese cabbage , shredded
- 1 carrot cut into julienne, large
- 1 bell pepper cut into strips, small red
- 1 bell pepper cut into strips, small green
- 3 scallions , cut into 1 inch (3 cm) sticks
- ⅓ cup celery chopped

Instructions
- Roll the chicken strips in the cornstarch and pat them down to remove any excess.
- Heat a wok over medium to high heat and pour in 4 tablespoons of soybean oil.
- Add the chicken strips and fry them until golden brown. Reserve them.

Noodles
- Immerse the noodles for 2 minutes in a large volume of boiling water.
- Untangle them, coat them with soybean oil and set them aside.
Sauce
- In a bowl, pour all the necessary ingredients for the sauce.
- Emulsify with a whisk and set aside.
Stir-fry
- Heat a large wok or large skillet over medium to high heat and pour in the remaining soybean oil.
- When the oil is hot, add the garlic and ginger and sauté without burning them until the aromas emerge.
- Over medium heat, start adding the vegetables one by one, except the scallions, and sauté them.
- Add the noodles and chicken and mix with two Chinese chopsticks or two wooden spoons.
- Add the reserved sauce mixture and stir again.
- While stirring, cook over high heat for 5 minutes.
- Add sesame oil and sauté again for 1 minute, stirring.
- Finally add the reserved scallion pieces and adjust the salt.
