Lo Mein Meal Prep
Lo Mein Meal Prep features whole wheat spaghetti tossed with sautéed cremini mushrooms, red bell pepper, carrot, snow peas, and spinach in a soy-ginger sauce. The noodles retain a tender bite balanced by crisp vegetables, while the sauce delivers savory, slightly sweet, and mildly spicy notes. It’s designed for make-ahead meals that stay satisfying and flavorful throughout the week.
Ingredients
- 8 ounces whole wheat spaghetti
- 1 tablespoon olive oil
- 3 cloves garlic minced
- 2 cups cremini mushrooms sliced
- 1 red bell pepper julienned
- 1 carrot julienned
- 1 cup snow peas
- 3 cups baby spinach chopped
- ½ teaspoon sesame seeds
For the sauce
- 2 tablespoons soy sauce or more, to taste, reduced sodium
- 1 tablespoon ginger freshly grated
- 1 teaspoon honey
- 1 teaspoon sesame oil
- ½ teaspoon sriracha optional
Instructions
- In a small bowl, whisk together soy sauce, ginger, honey, sesame oil, and Sriracha, if using; set aside.
- In a large pot of boiling water, cook noodles according to package instructions; drain well.
- Heat olive oil in a large skillet or wok over medium high heat. Add garlic, mushrooms, bell pepper and carrot. Cook, stirring frequently, until tender, about 3-4 minutes. Stir in snow peas and spinach until the spinach has wilted, about 2-3 minutes.
- Stir in spaghetti and soy sauce mixture, and gently toss to combine.
- Place into meal prep containers, garnished with sesame seeds, if desired.
