Loaded Oatmeal Breakfast Cookies

Ingredients

  • 2 cups old fashioned oats
  • ¼ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup peanut butter
  • ¼ cup maple syrup
  • 1/3 cup apple butter
  • 1 cup banana mashed (~1 large banana)
  • ½ cup dried cranberries
  • ½ cup salted sunflower seeds
  • ½ cup semi-sweet chocolate chips
  • ¼ cup ground flax

Instructions

  1. Preheat oven to 325 degrees Fahrenheit.
  2. In a large bowl, combine all the ingredients together
  3. With a large ice cream scoop or ¼ cup measurer, scoop out cookie dough and place it on a parchment lined baking sheet.
  4. Flatten each cookie with a spoon. They do not flatten on their own, so they need to be flattened before baking.
  5. Bake for 15-18 min or until edges are slightly brown.
