Loaded Seven Layer Brownies

Ingredients

  • one 20-ounce box brownie mix plus ingredients called for to make the brownies
  • 1 cup sweetened shredded coconut
  • ½ cup semi-sweet chocolate chips
  • ½ cup butterscotch or peanut butter chips
  • ½ cup Toffee bits
  • about 3/4 of a 14-ounce can sweetened condensed milk
  • ½ cup M&Ms

Instructions

  1. Please read over the baking notes below for tips before beginning the recipe.
  2. Preheat oven to 325F (or 350F is that's what's called for on your box of brownie mix), line a 9x9-inch pan with foil for easier cleanup, spray with cooking spray; set aside.
  3. Mix up the brownie batter according to the ingredients called for on the package (egg(s), oil, water), turn the batter out into prepared pan, and bake for about 30 minutes, or until brownies are about 90% cooked through, but not completely since they are going back into the oven again for approximately 30 more minutes.
  4. Evenly sprinkle the brownies with the coconut, chocolate chips, butterscotch or peanut butter chips, toffee bits, and evenly drizzle with sweetened condensed milk.
  5. Return the pan to the oven, turn oven temp to 325F if it wasn't already there, and bake for about 20 minutes, or until the top is becoming lightly golden browned and the sweetened condensed milk is not pooling.
  6. Return the pan from the oven, even sprinkle with the M&Ms, and bake for about 5 to 10 more minutes, or until the top is as golden browned and set as desired.
  7. Cool brownies in the pan for at least 2 hours before slicing and serving.

Notes

  • I made the brownies using Ghirardelli Dark Chocolate Premium Brownie Mix. The mix calls for only 1 egg and a ratio of water/oil that is not typical for boxed brownie mixes. Additionally, the brownies bake at 325F rather than 350F, also not common. I loved this mix for these brownies and highly recommend using it.
  • If you select a brownie mix or make brownies from scratch that are supposed bake at 350F, you may not need to bake them for quite as long initially since it's a hotter oven by 25 degrees.
  • After adding the coconut and various baking chips, if you weren't already baking at 325F, make sure to turn the oven down to 325F so the coconut doesn't burn.
  • The M&Ms are added in the final 5 to 10 minutes of baking so that they don't crack or bleed excessively since extended heat exposure can wreak havoc on them.
  • Storage: Brownies will keep airtight at room temp for up to 1 week and in the freezer for up to 4 months.
