Lobster Mac and Cheese

This easy Lobster Mac and Cheese is the ultimate elegant comfort food. Chunks of fresh lobster meat and tender macaroni in a creamy cheddar cheese sauce.

Ingredients

  • 1 pound elbow macaroni
  • 1/2 cup butter unsalted
  • 1/2 cup flour
  • 6 cups milk whole
  • 2 teaspoons kosher salt
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper coarse ground
  • 3 cups cheddar cheese shredded, white
  • 1 cup gruyere cheese , shredded
  • 1/2 cup Parmesan Cheese , freshly grated (not the stuff in the jar)
  • 1 pound lobster roughly chopped, cooked
Buttery Crisp Crust
  • 1 cup cracker crumbs or Panko breadcrumbs, Ritz
  • 2 tablespoons butter melted, unsalted
  • 1/4 cup parsley , chopped for garnish
  • 1/2 cup Parmesan Cheese , freshly grated (not the stuff in the jar)

Instructions

  1. Preheat oven to 375 degrees and butter a 9x13 baking dish.
  2. Cook pasta one minute shy of the ingredients on the box, then drain.
  3. In a large dutch oven on medium heat add the butter, onion and garlic, cooking for 4-5 minutes until onions are translucent.
  4. Add flour, whisk well and cook for 30 seconds then add in the milk in a very slow stream while whisking and let it simmer for 2 minutes.
  5. Add salt, paprika, ground mustard, and black pepper and whisk well to combine.
  6. Whisk in the white cheddar, Gruyere cheese, and 1/2 cup Parmesan until melted.
  7. Add pasta and cooked lobster to the pot, stir well then add to the baking dish.
  8. In a mixing bowl add the Ritz cracker crumbs, 1/2 cup Parmesan cheese, and melted butter and mix well, then add it over the top of the pasta.
  9. Bake 25-28 minutes, the cheese is bubbling and the cracker crumbs are golden brown.
