- 16 oz. cooked lobster meat
- 2 stalks celery finely chopped
- 4 tablespoons of mayonnaise
- 2 tablespoons chopped chives
- 1 tablespoon lemon juice freshly squeezed
- 1 teaspoon lemon zest
- ¼ teaspoon fine salt
- 4 New England split-top buns with sides cut
- ¼ teaspoon black pepper freshly ground
- 3 tablespoons unsalted butter divided
- 4 leaves lettuce
Instructions
- Rinse the lobster meat and remove any shells.
- Drain thoroughly then dry with paper towels.
- Cut the lobster into large pieces and set aside.
- In a bowl, combine celery, mayonnaise, chives, lemon juice, lemon zest, salt and black pepper. Taste and adjust the seasoning if necessary.
- In a large skillet over medium heat, melt half the butter and add the lobster meat.
- Cook over medium heat, stirring constantly, for 2 minutes until the lobster is heated through and buttered all over.
- Use a slotted spoon to distribute the lobster meat into the mayonnaise mixture and toss to coat.
- Discard the butter and juices released by the lobster and wipe out the pan.
- Melt the remaining butter in the pan over medium heat. Grill the buns on the cut sides for about 2 minutes per side until golden brown.
- Garnish the bottom of each bun with a lettuce leaf.
- Spread equal parts of the lobster meat mixture on the lettuce leaf and garnish with chives.
- Serve immediately with chips.
