Lobster Roll Pasta Salad
Lobster Roll Pasta Salad combines tender lobster meat with cavatappi pasta, celery, red onion, fresh chives, and a creamy dressing of light mayonnaise and Greek yogurt. Flavored with celery salt and kosher salt, this chilled pasta salad offers a luxurious, fresh-tasting side or light main dish with firm pasta and sweet lobster pieces.
Ingredients
- 16 oz lobster meat from (4) 1-1/4 lb whole lobsters or (4) 4 oz tails, cooked
- 1/2 cup celery chopped, including leaves
- 1/3 cup mayonnaise light
- 1/4 cup Greek yogurt 0%
- 1/4 cup chive fresh
- 1/4 cup onion red, chopped
- 1/2 teaspoon celery salt
- 1/4 teaspoon kosher salt (plus more for pasta)
- 8 ounces cavatappi pasta DeLallo brand
Instructions
- Prep all the ingredients, if your lobster is raw, steam it until just cooked.
- Bring a large pot of salted water to a boil. Cook the pasta according to directions, I prefer to cook it 1 to 2 minutes longer than al dente when cooking for a cold pasta salad.
- Drain and run under cold water.
- Remove cooked lobster from shell and chop into large chunks, about 1 inch. Toss with the remaining ingredients and serve chilled. Makes 10 cups

- Prepare the lobster by steaming until just cooked if using raw lobster.
- Cook pasta slightly longer than al dente to soften it for the chilled salad texture.
- Chop lobster into large, about 1-inch chunks to maintain a satisfying texture in the salad.
