Lobster Rolls

Ingredients

  • 4 cups water for boiling (Use 1 1/2 cups of water per 1 lb. of lobster)
  • 2 lbs live small lobster or 1/2 lb. (0.2 kg) cooked lobster meat
  • 3 tablespoons mayonnaise
  • 1 teaspoon honey
  • 1 teaspoon lemon juice
  • 1 pinch salt
  • 3 dashes ground black pepper
  • 1/2 tablespoon chives chopped
  • 3 hot dog buns
  • 2 tablespoons unsalted butter

  1. Bring the water to a boil. Add the lobsters, cover, and cook until they turn bright red, about 8 minutes.
  2. Remove the lobster and set aside to cool. Crack the shells and pick the meat from the tail and claws. Cut the lobster meat into bite-sized pieces.
  3. Combine the mayonnaise, honey, lemon juice, salt, black pepper, and chives in a bowl and set aside.
  4. Trim about 1/4 inch (5 mm) off both sides of the hot dog buns and spread butter on the cut sides. Heat a skillet over medium heat and cook the sides until nicely toasted and golden brown. Fill the inside of the buns with the lobster meat and serve immediately.
