Loco Moco
Loco Moco is a hearty dish composed of seared ground beef patties topped with a fried egg, served over basmati rice, and accompanied by a savory mushroom gravy made with shiitake mushrooms and garlic. The dish balances rich umami flavors from the mushroom gravy and beef with the comforting softness of rice and eggs, creating a satisfying one-dish meal suitable for lunch or dinner.
Ingredients
mushroom gravy
- 4 tablespoons butter divided, unsalted
- 2 garlic minced, cloves
- 4 ounces shiitake mushrooms stems removed and thinly sliced
- 1 2/3 cups chicken stock
- 3 tablespoons all-purpose flour
- black pepper to taste
- salt to taste
hamburger patties
- 8 ounces ground beef lean
- 1 teaspoons salt
- 1 teaspoon garlic powder
- 1/4 teaspoon ground white pepper optional
- 2 tablespoons neutral oil
fried eggs
- 2 tablespoon neutral oil
- 2 egg large
to serve
- 1 1/2 cups basmati rice cooked
- 1 tablespoon Furikake Seasoning
- 1 tablespoon chives sliced
Instructions
mushroom gravy
- Add 2 tablespoons butter to a saucepan and place over medium-high heat. Add garlic and mushrooms and sauté for about 3 minutes or until mushrooms are lightly caramelized. Season with salt and pepper.
- Melt remaining butter into the mixture. Sprinkle with flour and whisk together.
- Lower heat to medium and stir in stock. Continue to stir until no lumps remain and gravy has thickened enough to coat the back of a wooden spoon, about 5 minutes. Season with salt and pepper. Cover and set aside.
hamburger patties
- Place ground beef, salt, garlic powder, and black pepper into a mixing bowl.
- Mix together.
- Form 2 even (4 ounce) patties.
- Pour oil into a large skillet and place over medium-high heat. Once skillet is hot, add burger patties and sear for 3 to 4 minutes on each side. Reduce heat to medium and continue to cook burgers until medium doneness, an additional 3 to 4 minutes.
fried eggs
- In another skillet, add oil and place over medium-high heat. Once skillet is hot, add eggs and fry for 3 to 4 minutes or until whites have set and edges are crisp. Remove from heat.

- Divide rice between two plates and top each with a burger patty. Top with a ladle of gravy, a fried egg, and another ladle of gravy.
- Finish each dish with a sprinkle of furikake seasoning and sliced chives. Serve.
Notes
- Prepare mushrooms and garlic up to two days ahead to save time on cooking day.
- Form hamburger patties up to 12 hours in advance and store covered in the refrigerator.
- Use beef stock instead of chicken stock for a richer mushroom gravy.
- Fry eggs in a hot pan to create crispy edges while keeping yolks runny.
