Made primarily from egg whites and almond flour, they include psyllium husk powder for texture and Italian herbs for seasoning. The croutons are quick to prepare, using a microwave step followed by a crisp bake with a garlic and olive oil topping, producing a savory and crisp snack.
Ingredients
Bread
- 3 egg large, whites
- 9 tablespoon almond flour 54g, use 8.5 tablespoon if your almond flour is super fine
- ¾ teaspoon psyllium husk powder
- ¾ teaspoon baking powder
- 1.5 tablespoon water
Topping
- 3 tablespoon olive oil
- 1 garlic minced, or ½ teaspoon garlic powder, clove
- ⅓ - ½ teaspoon sea salt flaked, to taste
- ¼ teaspoon black pepper
- 1 tablespoon italian herb blend dried
Instructions
- Preheat the oven to 375F / 190C electric or 340F / 170C fan.
- Combine the egg whites, almond flour, psyllium husk, baking powder and water in a bowl and mix with a fork.
- Grease a 5 x 5 inch container and fill in the bread dough. Microwave for 3 minutes on high.
- Allow to cool. Chop into 30 cubes.
- Mix the ingredients for the topping in a bowl. Toss croutons in the olive oil mix and bake until crisp (20 - 25 minutes), turning once.
Notes
- Use finely powdered psyllium husk for the best texture; if only whole husks are available, increase the amount to 1.5 teaspoons.
- Microwave timing may need adjustment based on your microwave wattage: increase time slightly for lower wattage and reduce for higher wattage microwaves.
- Store croutons in an airtight container to keep them crisp for up to 5 days.
- This recipe yields about 32 croutons, divided into 4 servings of 8 croutons each, with approximately 4 grams net carbs per serving.
