Low Carb Keto Peanut Butter Cookies
These low carb keto peanut butter cookies combine crunchy peanut butter, granulated sweetener, egg, sea salt, and optional cinnamon for a dense, slightly chewy cookie. The cookies are formed into small balls, flattened, and baked until their edges firm while maintaining a soft center. Once cooled, they develop a crisp texture, making them suitable as a keto-friendly treat that balances sweet and salty flavors.
Ingredients
- 1 cup peanut butter 250g, crunchy, 100% peanuts
- ½ cup granulated sweetener (100g)
- 1 egg large
- pinch of sea salt
- cinnamon optional; ½ teaspoon
Instructions
- Preheat oven to 180 Celsius / 350 Fahrenheit.
- Put all ingredients in a bowl and mix with a fork.
- Roll small balls of dough (about 15g each) with your hands (or use a small cookie scoop) and flatten them on a baking sheet.
- Wet a fork and press on cookies to create a criss cross pattern.
- Bake 8 -10 minutes, until the edges are firm. (8 minutes = soft centre, 10 minutes = overall crunchy)
- Let cool completely before eating. They are very soft when just out of the oven, but will become crunchy once cooled.
- Store in an airtight container.
Notes
- Each cookie contains about 6 grams of net carbs, suitable for low carb diets.
- Choose peanut butter that contains only peanuts without other ingredients for best results.
- You can make your own peanut butter using a food processor if desired.
- Incorporating sea salt into the dough and sprinkling some on top balances sweetness with a salted caramel effect.
- Store cookies in an airtight container to keep them fresh.
