Low Carb Pancakes

Small batch low carb pancakes with a hint of cinnamon are the perfect keto breakfast. Top with sugar free maple syrup. Enough for 2 people or a couple of breakfast meals for one for several days.

Ingredients

  • 1 cup almond flour superfine
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 teaspoons monk fruit
  • 2 eggs large
  • 2 tablespoons water
  • 2 tablespoons oil avocado or coconut
  • 1 teaspoon vanilla extract

Instructions

  1. In a medium mixing bowl whisk together almond flour, baking powder, salt and sweetener.
  2. Form a well in the middle of the bowl.
  3. Add eggs, water, oil and vanilla extract.
  4. Combine all ingredients until mixed well. Add additional water if needed.
  5. Lightly grease a skillet and turn heat to medium.
  6. Add two tablespoons per pancake and gently swirl batter with the back of a spoon to form a small circle.
  7. Cook until the edges are set. Flip and cook the other side until cooked through.
  8. Enjoy.
