  • black pepper kosher, to season
  • salt kosher, to season
  • 6 garlic crushed, cloves
  • 1 teaspoon oregano dried
  • 1 teaspoon cumin ground
  • 1 teaspoon chili powder
  • 1 teaspoon cayenne pepper
  • ½ teaspoon garlic powder
  • ¼ cup extra virgin olive oil
  • 1 tablespoon lime juice

  • 1 pound flank steak cut in 6-7 pieces
  • 1 green bell pepper sliced, large
  • 1 red bell pepper sliced, large
  • 1 onion sliced, medium
  • 1 tablespoon butter unsalted

  1. In a small bowl, mix salt, pepper, garlic, oregano, cumin, chili powder, cayenne pepper, garlic powder and olive oil.

  1. Place the steak in a large enough baking dish.
  2. Pour marinade on the steak and massage both sides a bit, cover with a foil and marinade for a minimum of 1 hour to overnight.
  3. When ready, preheat the oven to 400 F | 205 C. Prepare a baking tray with parchment paper.
  4. Remove steak from marinade, place on a cutting board and cut into 6-7 pieces.
  5. Equally divide bell peppers and onions into the middle of each piece of steak. Roll steak around vegetables. Secure with toothpicks and place in the baking dish.
  6. Drop butter around the steak rolls. Transfer in the oven and bake for 5-8 minutes depending on the doneness you prefer.
  7. Remove from the oven and allow to rest for 5 minutes before serving.
