Low Carb Taco Salad

Ingredients

  • 1 tsp olive oil
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 5 cup arugula and greens or your favorite lettuce mix
  • 2 white onion diced
  • 2 bell pepper diced
  • 12 cherry tomatoes diced
  • 1 cup sharp cheddar cheese shredded
  • 2 cup salsa
  • sour cream and guacamole optional garnish

Instructions

  1. Heat oil in a heavy bottom pan over medium heat. Add the ground beef and brown.
  2. Once beef is browned add the taco seasoning and stir, add some water if necessary to get seasoning to adhere. Set aside.
  3. Combine all remaining ingredients and top with the the taco meat.
