Ingredients
- 1.2 kg – 2 2/3 lbs. chicken thigh fillets boneless and skinless
Marinade
- 1 tsp salt
- 2 tbsp garlic infused olive oil
- Zest of 1 lemon grated
- 2 tbsp red wine vinegar
- 1 tbsp paprika
Herb Sauce
- 1 cup parsley fresh
- 1 cup Coriander fresh
- ½ cup oregano fresh
- ¼ cup extra virgin olive oil
- Juice of 1 lemon
- salt to taste

Notes
- If you are not on a low FODMAP diet, you can use regular extra virgin olive oil for the marinade and add 4 garlic cloves, crushed.
- For the Herb Sauce, you can use mint instead of fresh oregano if you cannot find any. I would not recommend dried oregano for this recipe as it is too strong in taste.
