- 1/3 cup butter
- 1 1/2 cups sugar
- 3 eggs
- 2 tablespoons all-purpose flour
- 2 tablespoons cornmeal
- 1 1/4 cups crushed pineapple drained
- 1 1/4 cups sweetened coconut flakes
- 1 teaspoon vanilla extract
- 1 unbaked pie shell
Instructions
- Preheat the oven to 350°F.
- In a medium bowl, beat the butter, sugar, eggs, flour, and cornmeal until well blended.
- Add the pineapple, coconut, and vanilla and mix well.
- Pour the mixture into the pie shell and bake for 45 minutes or until a toothpick inserted into the center comes out almost clean.
