Luby's Skillet Cabbage

Ingredients

  • 1 large green cabbage
  • 6 ounces Bacon cut into 1 inch pieces
  • 1/2 cup chopped tomato
  • 1 1/2 cups water
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • 3 tablespoons butter

Instructions

  1. Remove the cabbage core and discard the core.
  2. Slice the cabbage into 1 to 2-inch pieces; you should have approximately 12 cups.
  3. In a very large skillet saute bacon over medium heat until it has cooked half way. Do not drain the grease.
  4. Add cabbage to the skillet, and add 1 1/2 cups of water to the skillet.
  5. Place a lid over the pot. It may not fit all of the way, that's ok. the cabbage will cook down.
  6. After 10 minutes add the chopped tomato, pepper, and salt. Reduced the heat to low and simmer for about 20 minutes.
