Lyonnaise Potatoes

Ingredients

  • 3 tablespoons unsalted butter
  • 1 large onion thinly sliced
  • 3 cloves garlic minced
  • 1 1/2 pounds Russet potatoes peeled and sliced into 1/4-inch rounds
  • salt to taste
  • black pepper to taste
  • 1/4 cup fresh parsley chopped

  1. Preheat the oven to 375 degrees F.
  2. In a large skillet, heat unsalted butter over medium heat. Add onions and cook until caramelized, about 10-15 minutes. Add the garlic and cook for an additional minute.
  3. Layer the sliced potatoes in an oven-safe dish, seasoning each layer with salt and pepper. Spread the caramelized onions on top.
  4. Cover the dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 20-25 minutes until the potatoes are tender.
  5. Remove from oven and sprinkle with chopped parsley before serving.
