Mac and Cheese for Two

Ingredients

  • 1 cup macaroni
  • 1 teaspoon olive oil
  • 1 tablespoon all-purpose flour
  • 1 tablespoon unsalted butter
  • ½ chicken cube
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 teaspoon Italian Herbs
  • ½ teaspoon white pepper
  • ¼ teaspoon salt
  • ½ cup milk
  • ½ cup heavy cream
  • ½ cup cheddar cheese
  • mozzarella cheese as required

Instructions

  1. Start boiling the macaroni in salted boiling water according to package instructions.
  2. Heat butter and oil in a pan and add the flour. Cook it for 2 mins then add the chicken cube, garlic powder, onion powder, salt, white pepper and Italian herbs. Mix well.
  3. Pour in the milk and cream. Stir continuously and get rid of any lumps.
  4. Wait for the sauce to thicken slightly then add in the cheddar cheese. Let it melt. Stir around to get a smooth and silky sauce.
  5. Then add in the macaroni and mix.
  6. Take 2 big (or 3 small) ramekins and add the macaroni to it. Top with mozzarella cheese.
  7. Bake at 200C for 5-8 mins until cheese melts and is golden on top.
  8. Garnish with chives (optional) and serve hot.
