Macadamia Muesli (Gluten-Free, Paleo)

This macadamia muesli, inspired by my recent trip to Sydney, is packed full of vitamins, minerals and nutrients. And it couldn't be easier to make!

Ingredients

  • 1 cup macadamia nuts roughly chopped, raw
  • 1 cup sunflower seeds raw
  • 1 cup Pepitas pumpkin seeds, raw
  • 1 cup coconut flakes unsweetened
  • 1/2 cup almond roughly chopped, raw
  • 1/2 cup dried apricot roughly chopped
  • 1/4 cup Flaxseed ground
  • 1 tsp vanilla bean powder
  • 4-6 cups coconut milk

Instructions

    Cup of Yum
  1. Add all ingredients except the coconut milk into a large bowl and stir until combined.
  2. Serve individual portions and add coconut milk.
  3. Store remaining muesli in an airtight container for several weeks.
