Ingredients
- 4 cups whole milk
- ¾ cup cornstarch
- ½ cup caster sugar
- 4 tablespoons orange blossom water
- 1 teaspoon gum arabic , crushed
- 4 tablespoons crushed pistachios
- 3 tablespoons mineral water
Instructions
- In a bowl, dilute the cornstarch in mineral water, and mix well until any lumps have disappeared.
- In a non-stick saucepan over a medium heat, combine the milk and cornstarch, stirring continually until thickened.
- Add the sugar, orange blossom water and gum arabic, and let boil for another 2 minutes while continuing to stir.
- Continue to mix until the custard thickens, and the desired texture (thin or thick) is obtained.
- Divide into ramekins, let cool to room temperature, then place in the refrigerator for a few hours to chill.
- When ready to serve, sprinkle with crushed pistachios.
