Mango Blueberry Smoothie

Ingredients

  • 1 heaping cup of frozen or fresh blueberries
  • 1 ¼ cup of unsweetened plain soy milk (for protein) or plant-based milk of choice
  • 1 heaping cup of frozen or fresh mango chunks
  • Juice of ½ lime, or more to taste
  • 1 cup of ice (if using fresh fruit)

Instructions

  1. Add the frozen blueberries and plant-based milk to the cup of a blender. Blend for 1 minute.
  2. Add the frozen mango and lime juice. Blend for another minute or until creamy.
  3. Serve and enjoy immediately.

Notes

  • To adjust the thickness: Adjust how much liquid you add.
  • Fresh vs. frozen fruit: The former will still yield a creamy consistency that is made more refreshing with the addition of ice, whereas frozen fruit creates a thick, soft-serve consistency.
  • Sweeten to taste: The fruit is usually sweet enough, but taste it and add a touch of maple syrup, date paste/syrup, a sugar-free syrup, etc., if preferred.
