Mango Chicken Quesadillas

Ingredients
- 1 cup chicken leftover
- 4 flour tortillas
- 1/2 cup cheddar cheese shredded
- 1/2 cup Mango diced
- 2 Tablespoon cilantro chopped
- cooking spray
Instructions
- Heat a non-stick skillet sprayed with cooking spray over medium heat.
- Peel and chop the mango. Chop the chicken.
- Top each tortilla with a quarter of the chicken, mango, cheese and coriander. Fold tortillas in half and brown in skillet 2 at a time. Cook about 2 minutes on each side, flipping once.
