Mango Chicken Quesadillas

Ingredients

  • 1 cup leftover chicken
  • 4 flour tortillas
  • 1/2 cup cheddar cheese shredded
  • 1/2 cup Mango diced
  • 2 Tablespoon cilantro chopped
  • cooking spray

Instructions

  1. Heat a non-stick skillet sprayed with cooking spray over medium heat.
  2. Peel and chop the mango. Chop the chicken.
  3. Top each tortilla with a quarter of the chicken, mango, cheese and coriander. Fold tortillas in half and brown in skillet 2 at a time. Cook about 2 minutes on each side, flipping once.
