Mango Chili Lime Chicken

This easy Mango Chili Lime Chicken meal prep is coated with a sweet and spicy marinade. Delicious hot or cold.

Ingredients

  • 1 Mango peeled and cubed
  • 3 tbsp Sriracha
  • 1/2 of a lime juiced
  • 1 shallot
  • 4 cloves garlic
  • 2 tbsp honey
  • 1/4 cup orange juice
  • oil/cooking spray
  • 4 skinless boneless chicken breasts

Instructions

  1. In a blender, mix everything but your chicken and oil/cooking spray.
  2. Once the marinade is done blending up, place your chicken in a bag with the marinade. Marinate the chicken for at least 1 hour or overnight.
  3. When ready, heat your oven to 425F, cover a cooking tray with cooking spray or oil and bake the chicken for 25 minutes. Finish under the broiler for 3-5 minutes.

Notes

  • To serve: I paired it with mango cubes, mixed greens, and quinoa.
