Mango Chipotle Barbecue Salmon
Baked Salmon that gets topped with a sweet and spicy mango chipotle barbecue sauce. It adds such amazing flavor and makes this salmon a 5 star recipe!

Ingredients
- 4 (6-ounce) salmon fillets
- salt and pepper
- 1 large peeled and cubed mango
- 1 clove garlic
- 2 Chipotle Pepper in Adobo Sauce
- ½ cup ketchup
- 2 tablespoons packed brown sugar packed
- 1 tablespoon rice wine vinegar
- Chopped mango and green onions for garnish, optional
Instructions
- Preheat oven to 400 degrees Fahrenheit. Spray a 9x13-inch pan with non-stick cooking spray.
- Place the 4 (6-ounce) salmon fillets in the prepared pan, season with salt and pepper, cover with aluminum foil, and bake for 15-17 minutes until the salmon is opaque in the center. Remove the aluminum foil the last few minutes of baking to brown the tops.
- While the salmon is baking place 1 large peeled and cubed mango, 1 clove garlic, 2 chipotle pepper in adobo sauce, ½ cup ketchup, 2 tablespoons packed brown sugar, and 1 tablespoon rice wine vinegar in a food processor.
- Pulse the food processor until the mixture is smooth. Spread about 1-2 tablespoons of the sauce on each baked salmon filet. Top with Chopped mango and green onions for garnish, and serve.
