Ingredients

  • 1 medium carrot peeled and chopped
  • ¼ cup white onion chopped
  • 2 small orange habanero chiles seeded and deveined
  • 1 large ripe mango peeled and diced
  • 1 clove garlic minced
  • 1 teaspoon kosher salt
  • 1 ½ teaspoons honey
  • ¼ cup apple cider vinegar
  • 2 tablespoons fresh lime juice

Instructions

    Cup of Yum
  1. Add carrot, onion, and chiles to a food processor and pulse until chopped.
  2. Add the mango, garlic, salt, and honey. Process until smooth, about 2 minutes, scraping the sides as needed.
  3. Add the mango mixture to a small saucepan with vinegar and lime juice.
  4. Bring to a boil over medium high heat. Reduce the heat to a simmer (medium low) and simmer for 15 to 20 minutes or until thickened. Cool and refrigerate.

Notes

  • Safety Note: Habanero peppers contain oils that are very hot and can burn your skin or eyes, so use caution when working with them. I highly recommend wearing gloves when working with peppers (including jalapeno peppers) as the oils can be difficult to remove. Be mindful that the oils can also transfer to cutting boards, so use lots of hot, soapy water or wash them in the dishwasher.
