Ingredients
Mango Lemongrass Chicken:
- 8 small chicken thighs thinly sliced
- 1/4 cup mango or orange juice
- 2 talks lemongrass cut and only soft bottom portion retained, hard exterior and top portion can be discarded
- 2 cloves garlic peeled
- 1/3 cup cilantro leaves loosely packed
- 1/4 cup coconut milk regular or low fat will work
- 1 tbsp vegetable oil grapeseed, avocado, etc.
- 1 tsp fine sea salt
Noddles:
- 1 pkg vermicelli noodles
Lettuce:
- 1 large head of lettuce bib, butter, or iceberg lettuce, leaves separated
Mango Salsa:
- 2 ripe yellow mangos
- 1/2 Long English Cucumber
- 1/4 red onion peeled and chopped into small pieces.
- 2 tbsp mango or orange juice
- 1 tbsp lime juice from approximately 1/2 lime
- 1/4 tsp fine sea salt
