Mango Salad

Mango Salad- ripe juicy mangoes with jicama, cucumber, red pepper, mint, cilantro, fresh lime juice, and a sprinkle of Tajin. This refreshing simple salad is perfect for summertime or anytime!

Ingredients

  • 2 Mango chopped, ripe
  • 2 cups jicama peeled and chopped
  • 2 cups cucumber English, chopped
  • 1 red bell pepper seeds removed and chopped
  • 2 scallion sliced
  • 2 tablespoons cilantro chopped leaves
  • 2 tablespoons mint leaves chopped, fresh
  • 2 lime small
  • kosher salt to taste
  • tajin seasoning for sprinkling on salad, optional

Instructions

    Cup of Yum
  1. In a large bowl, combine the mango, jicama, cucumber, red pepper, scallions, cilantro, and mint.
  2. Squeeze fresh lime juice over the salad and toss. Sprinkle with salt and Tajin, if using. Toss again.
  3. Serve and enjoy!

Notes

  • I like to chop everything in 1/2-inch pieces. You can also cut them in matchsticks. Avocado is also great in this salad!
