Mango Salsa Chicken

Ingredients

For the chicken:
  • 4 tsps lime juice fresh
  • 2 tsps green Tabasco sauce
  • 2 tsps honey
  • 2 tsps olive oil
  • 1 lb chicken breast about 4 small breasts, boneless, skinless
For the salsa:
  • 2 mangos diced, large
  • 2 Roma tomato diced, large
  • 1 avocado diced
  • 2/3 cup red bell pepper diced
  • 6 tbsps cilantro minced
  • lime depending how limey you like it, juice of 1 to 2 large
  • salt to taste

Instructions

  1. In a small bowl, whisk together the lime juice, green tabasco, honey and olive oil.
  2. Place the chicken breast in the bowl and stir around to coat in the marinade. Cover and refrigerate for at least 2 hours to overnight (the longer the better!)
  3. Rub a grill with olive oil and heat to medium heat.
  4. Grill the chicken until no longer pink inside, about 4 to 6 minutes per side. Then transfer to a plate and let rest for 5 minutes.
  5. Combine all the ingredients for the mango salsa in a large bowl and mix well. Season to taste with salt.
  6. Top chicken with mango salsa and serve.
