Mango Salsa Chicken with Chipotle Honey Glaze

Ingredients

  • ¼ cup honey
  • 2 tbsp lime juice
  • 1 tsp ground chipotle pepper
  • ½ tsp ground cumin
  • ½ tsp paprika
  • 1 tbsp fresh cilantro chopped
  • 2 boneless, skinless chicken breasts app 1/2 lb each

Instructions

  1. Preheat a grill to medium heat.
  2. In a medium bowl, combine the honey, lime juice, chipotle powder, cumin, paprika and cilantro.
  3. Place each chicken breast in it’s own foil basket. Pour the chipotle honey glaze over each chicken breast in the foil. 
  4. Place the chicken in the foil on the grill and grill for 10-12 minutes per side.
  5. Remove from the grill, rest 5 minutes, then slice and top with the mango salsa.
