Maple Bacon Sweet Potatoes

You're going to love how simple these are to make. Even my non-sweet-potato-lovers enjoyed this recipe. I think it has something to do with the maple and the bacon. I mean, duh.

Ingredients

  • 3 large sweet potatoes
  • 2 tablespoons pure maple syrup
  • 1 tablespoon olive oil
  • 3 lices Bacon fried and chopped
  • 1 teaspoon dried parsley
  • salt and pepper to taste

Instructions

  1. Preheat oven to 425 degrees.
  2. Peel and wash the potatoes and dice into bite sized pieces. Place potatoes on a foil lined baking sheet.
  3. Add the maple syrup and olive oil to a small bowl and whisk to combine. Pour mixture over the potatoes and toss to coat.
  4. Place in oven and bake for 20 minutes, stirring halfway through.
  5. Remove from oven and sprinkle with bacon, parsley, salt, and pepper.
