Ingredients

  • 3/4 pound Bacon
  • 1 3/4 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 2 eggs slightly beaten
  • 1 3/4 cup milk
  • 1/2 cup vegetable oil
  • 1/4 cup real maple syrup
  • 1 teaspoon maple extract

  1. Preheat a waffle iron.
  2. Cut the bacon into small pieces. Cook over medium heat until crisp; remove to a paper towel lined plate.
  3. In a bowl, mix together the flour, sugar, baking powder, and salt. Make a well in the center of the mixture. Pour in the eggs, milk, oil, maple syrup, and maple extract. Mix until just combined. Fold in the bacon.
  4. Oil the waffle maker, then cook the waffle batter according to the manufacturer’s instructions. Serve with additional maple syrup, if desired.
