Ingredients

  • 2 cups old fashioned oats
  • 1 cup milk
  • 1/2 cup maple syrup
  • 1/3 cup oil
  • 2/3 cup brown sugar
  • 2 eggs
  • 1 1/2 cups flour *all purpose
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 400 degrees and line a muffin tray with liners/grease.
  2. In a mixing bowl, combine the oats and milk.
  3. Add in the maple syrup, oil, brown sugar, eggs, flour, baking powder, cinnamon, baking soda, and salt.
  4. Stir until just combined.
  5. Divide batter evenly into prepared muffin cups, filling about 3/4 full.
  6. Place pan into preheated oven and bake 17-20 minutes.
  7. Remove from oven and allow to cool slightly before serving!
