Ingredients
- 2 cups old fashioned oats
- 1 cup milk
- 1/2 cup maple syrup
- 1/3 cup oil
- 2/3 cup brown sugar
- 2 eggs
- 1 1/2 cups flour *all purpose
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
Instructions
- Preheat oven to 400 degrees and line a muffin tray with liners/grease.
- In a mixing bowl, combine the oats and milk.
- Add in the maple syrup, oil, brown sugar, eggs, flour, baking powder, cinnamon, baking soda, and salt.
- Stir until just combined.
- Divide batter evenly into prepared muffin cups, filling about 3/4 full.
- Place pan into preheated oven and bake 17-20 minutes.
- Remove from oven and allow to cool slightly before serving!
