Maple Roasted Sweet Potatoes with Bacon

Ingredients

  • 4 sweet potatoes, cut into 1-inch chunks (peeling is optional)
  • 2 teaspoons unsalted butter, melted
  • ½ cup Nature's Hollow Sugar Free Maple Syrup or Homemade Maple Syrup
  • 1 teaspoon dried dill weed
  • 1 teaspoon garlic salt
  • ½ teaspoon ground black pepper
  • 8 slices lean turkey bacon, cubed
  • ½ teaspoon butter flavoring (more or less to taste), optional

Instructions

  1. Preheat oven to 425° F. Line a baking sheet with parchment paper or a silicone mat; set aside.
  2. Toss the sweet potato chunks with the maple syrup, butter, dill, garlic salt, and pepper.
  3. Spread in a single layer over the baking sheet. Bake for 25 minutes.
  4. Remove from oven, stir the potatoes, and lay the raw bacon cubes over the top. Return to the oven and bake an addition 20 to 30 minutes or until the potatoes and bacon have achieved the desired amount of doneness.
  5. If you would like a stronger butter flavor, add up to ½ teaspoon butter flavoring after the dish is done.

Notes

  • Please note that the maple "syrup" is made using sugar alcohols, making each serving 4 more carbs less (for about 12 net carbs total per serving).
