Margarita Quesadilla

Fresh basil and tomatoes come together with melty mozzarella in this quesadilla version of a margarita pizza.

Ingredients

  • 1 t butter
  • 2 flour tortillas burrito sized
  • ¾ c tomato chopped
  • ½ c. mozzarella cheese shredded, to 1 cup
  • 1 T basil fresh, julienne

Instructions

    Cup of Yum
  1. melt butter in large skillet over med. heat
  2. place one tortilla in pan
  3. spread half of cheese on tortilla
  4. spread tomato and basil evenly over cheese
  5. spread remaining cheese on top of tomato and basil
  6. lay second tortilla on top
  7. press down, trying to flatten
  8. once bottom is golden brown and cheese is melted flip
  9. cook until bottom is golden brown
  10. remove from heat and allow to cool 1-2 minutes
  11. cut like a pizza
