Margherita Flatbread Pizza

Mozzarella and Parmesan cheeses, sliced tomatoes, and fresh basil baked over a flatbread crust.

Ingredients

  • 4 Flatbreads or Pita Breads (I like the Papa Pita brand)
  • 4 teaspoons minced garlic 
  • 2 cups shredded Mozzarella cheese
  • 2 roma tomatoes sliced thin
  • 8 small basil leaves cut in small strips (chiffonade)
  • 4 Tablespoons grated Parmesan cheese

Instructions

  1. Preheat oven to 375 degrees F. Spray two baking sheets with non-stick spray. Lay two flatbreads onto each baking sheet.
  2. Spray the tops of each flatbread with non-stick spray. Then place one teaspoon of minced garlic onto each flatbread. Spread out evenly all over the top.
  3. Sprinkle a half cup of shredded mozzarella cheese evenly over each flatbread. Then top cheese with four slices of tomato. Top tomato with one to two Tablespoons of basil strips.
  4. Season with salt and pepper, then sprinkle one Tablespoon of Parmesan cheese all over the tops of each pizza.
  5. Bake in preheated oven for 12 minutes, or until cheese is melted and bubbly. Remove from oven and let pizzas stand for about 5 minutes. Season with salt and pepper, if desired. Slice, serve, and enjoy!
