Marinated Christmas Cheese
Marinated Christmas Cheese combines sharp cheddar and creamy goat cheese immersed in a flavorful marinade made with olive oil, red wine vinegar, honey, herbs, garlic, and roasted red peppers. The marinade infuses the cheese cubes delicately, balancing rich dairy texture with a bright, herby, and slightly tangy flavor. This preparation is ideal as a festive appetizer served alongside crackers or baguettes during holiday gatherings.
Ingredients
- 8 ounces cheddar cheese cut into cubes, sharp
- 8 ounces goat cheese cut into pieces
- ½ cup extra virgin olive oil
- ½ cup red wine vinegar
- 2 teaspoons honey
- ½ teaspoon basil dried
- ½ teaspoon oregano dried
- ¼ teaspoon salt
- ¼ teaspoon black pepper freshly cracked
- 2 green onion thinly sliced
- 2 garlic minced, cloves
- 3 tablespoons basil chopped, fresh
- 2 tablespoons parsley chopped, fresh
- 1 tablespoon dill chopped, fresh
- 1 roasted red pepper in oil, drained and chopped
Instructions
- Place the cheddar and goat cheese in a large container or plate that has a lip - something that allows you to cover it in the marinade. Alternate the pieces so the cheddar and goat aren’t all in on spot.
- In a bowl, whisk together the olive oil, vinegar, honey, basil, oregano, salt, pepper, green onions, garlic, basil, parsley and dill. Stir in the chopped red peppers.
- Pour the marinade over the cheese. Refrigerate for at least 6 hours, or even overnight. Serve with crackers or baguettes.
Notes
- Marinate the cheese for at least six hours or overnight to develop richer flavors.
- Serve cold with crackers or baguettes to complement the marinated cheese texture and taste.
- Use a container with a lip or plate that can be covered to keep the cheese submerged in the marinade during refrigeration.
