Marinated Mushrooms
Garlicky, herb-infused Marinated Mushrooms that are addictively delicious!
Ingredients
- 1 pound baby bella mushroom
- 1/4 cup extra virgin olive oil
- 3 tablespoons red wine vinegar
- 3 cloves garlic minced
- 1 tablespoon parsley finely chopped, fresh
- 1 teaspoon thyme chopped, fresh
- red pepper flakes to taste
- lemon zest of one
- 1 1/2 tablespoons lemon juice
- kosher salt to taste
Instructions
- Bring a pot of water to a boil, generously salt it, add the mushrooms, and simmer for 5-7 minutes or until cooked through. Drain well.
- In a bowl, combine the marinade ingredients and whisk together; adjust the seasonings as needed.
- Add the warm mushrooms to the marinade. Toss to coat evenly. Let sit for at least 20 minutes before serving, or refrigerate to let the flavors meld before serving. Enjoy for up to 5 days.
