Marinated Tomatoes

Ingredients

  • 1 pound ripe tomatoes
  • ½ white onion sliced
  • ¼ cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 clove garlic sliced
  • 1 teaspoon chopped fresh parsley
  • 1 teaspoon chopped fresh basil
  • ½ teaspoon salt or to taste
  • ½ teaspoon black pepper

Instructions

    Cup of Yum
  1. Wash tomatoes and slice ¼ " thick.
  2. Whisk the remaining ingredients and pour over tomatoes and onions in a shallow bowl or a freezer bag.
  3. Marinate at least 2 hours or up to 2 days turning occasionally. Discard garlic before serving.

Notes

  • Marinated tomatoes will last up to 3 days in an airtight container in the fridge. 
  • Stir and refresh with salt & pepper before serving.
