Ingredients
- 1 pound ripe tomatoes
- ½ white onion sliced
- ¼ cup olive oil
- 2 tablespoons red wine vinegar
- 1 clove garlic sliced
- 1 teaspoon chopped fresh parsley
- 1 teaspoon chopped fresh basil
- ½ teaspoon salt or to taste
- ½ teaspoon black pepper
Instructions
- Wash tomatoes and slice ¼ " thick.
- Whisk the remaining ingredients and pour over tomatoes and onions in a shallow bowl or a freezer bag.
- Marinate at least 2 hours or up to 2 days turning occasionally. Discard garlic before serving.
