Maroulosalata (Greek Lettuce Salad)

Maroulosalata is a Greek salad featuring thinly sliced romaine lettuce ribbons combined with green onions, fresh dill, and crumbled feta cheese. The dressing is a simple emulsion of extra virgin olive oil, fresh lemon juice, and seasoning, which is gently massaged into the greens with the hands to evenly distribute flavor and soften the leaves. Ingredients

  • 2 romaine lettuce hearts very thinly sliced into ribbons (about 10 cups
  • 5 green onion sliced, or scallions
  • 1 dill chopped (about 1/4 cup, bunch
  • 4 ounces feta cheese can substitute cow feta, sheep's milk
  • 1/3 cup extra virgin olive oil
  • lemon about 3 tablespoons, juice of one large lemon
  • 1/2 teaspoon kosher salt or sea salt
  • 1/4 teaspoon freshly ground white pepper or black pepper

  1. To make the dressing, blend the olive oil, lemon juice and salt/pepper in a food processor or blender, or whisk vigorously in a bowl until it's emulsified. If you're not using it immediately, store it in a jar in the fridge until ready to use and shake it thoroughly before using. 
  2. Place the lettuce, green onions, dill and feta in a large mixing bowl.Pour all of the dressing over the salad and toss it together using your hands to massage the greens and to break down and more evenly distribute the feta.Serve immediately.

Notes

  • The salad and the dressing can be prepared up to several hours apart; add dressing just before serving to maintain crispness.
  • Optional additions include grilled chicken, rotisserie chicken, flaked salmon or tuna, or shrimp for protein.
  • Vegetarian options can incorporate chickpeas, cucumber, olives, avocado, tomatoes, or sliced red onion for more variety and color.
  • Once dressed, consume the salad within a couple of hours for optimal texture and flavor.
