Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 carrots, sliced
- 2 celery stalks, sliced
- 1 ½ pounds boneless, skinless chicken breasts, cut into bite-sized pieces
- 4 cups Chicken Broth
- 1 cup heavy cream
- 1 cup frozen peas
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- salt and pepper to taste
- Fresh parsley, chopped (for garnish)

Instructions
- Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion, garlic, carrots, and celery. Cook until the vegetables are softened, about 5-7 minutes.
- Add the chicken pieces to the pot and cook until they are no longer pink, about 5 minutes.
- Pour in the chicken broth and bring the mixture to a boil. Reduce the heat to a simmer and cook for about 15 minutes, or until the chicken is fully cooked and the vegetables are tender.
- Stir in the heavy cream, frozen peas, dried thyme, and dried rosemary. Season with salt and pepper to taste. Simmer for an additional 5 minutes, or until the soup is heated through.
- Garnish with fresh parsley and serve hot with crusty bread.
