Ingredients

  • 1 teaspoon dried rosemary

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion, garlic, carrots, and celery. Cook until the vegetables are softened, about 5-7 minutes.
  2. Add the chicken pieces to the pot and cook until they are no longer pink, about 5 minutes.
  3. Pour in the chicken broth and bring the mixture to a boil. Reduce the heat to a simmer and cook for about 15 minutes, or until the chicken is fully cooked and the vegetables are tender.
  4. Stir in the heavy cream, frozen peas, dried thyme, and dried rosemary. Season with salt and pepper to taste. Simmer for an additional 5 minutes, or until the soup is heated through.
