Marry Me Pasta Salad
Marry Me Pasta Salad puts a fun and flavorful twist on the beloved “Marry Me Chicken” recipe. Packed with cheesy tortellini, juicy fresh and sun-dried tomatoes, and fragrant basil, it’s all tossed in a rich homemade dressing that makes every bite totally irresistible!
Ingredients
- 19 ounces cheese tortellini boiled, drained, cooled
- 1 Cup cherry tomato halved
- ½ Cup sundried tomatoes chopped
- ¼ Cup basil leaves
- ¼ Cup Parmesan Cheese shredded
- 2 Cups baby spinach
Dressing
- 1/2 Cup mayonnaise
- 1/2 Cup sour cream
- 1/2 Cup Italian dressing
- 1/3 Cup Parmesan Cheese grated
- 1 Tablespoon sun dried tomato oil
- 2 cloves garlic minced
- 1/4 Cup basil chopped, fresh leaves
- 1/4 teaspoon red pepper flakes
- black pepper to taste
- salt to taste
Instructions
- In a large bowl combine your pasta, cherry tomatoes, sundried tomatoes, basil, cheese and spinach.
- In a mixing bowl combine the mayonnaise, sour cream, italian dressing, parmesan cheese, oil, garlic, basil leaves, red pepper flake, salt and pepper.
- Whisk to combine.
- Gently fold the dressing over the pasta mixture.
- Chill for 4 hours.
- Garnish with more tomatoes and basil, serve!
- Serve!
Notes
- Store leftovers in the refrigerator in an airtight container for 3 days.
- Additions - You can add any veggies you like to this. Add some leftover chicken to this for a refreshing meal.
