Mashed Butternut Squash

Ingredients

  • 5 pounds butternut squash
  • 1 tablespoon olive oil
  • 3 tablespoons butter
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon cinnamon

Instructions

  1. Preheat your oven to 375°F. Line a sheet pan with foil or parchment paper.
  2. Cut your squash in half and scoop the seeds out. Place the squash on the sheet pan and brush the oil over the flesh of the squash.
  3. Bake for one hour or until the flesh can be pierced easily with a fork.
  4. Scoop the flash of the skin into a large mixing bowl. Add in the butter, salt, pepper, and cinnamon. Using a mixer on medium speed, mix until it’s smooth.

Notes

  • Store tightly covered in the refrigerator for up to three days.
